National Eat a Cranberry Day

Well, it is that time of year again. I still only have a very fuzzy idea of what exactly I will be cooking for Thanksgiving (three grocery shopping days left to figure that out).
Today though, I know exactly what to cook and eat. National Eat a Cranberry Day is upon us, and you really don’t have to twist my arm to get me to celebrate.

Cranberry Ginger Hermit Cookies

12 Tbsp unsalted butter, softened

1 cup sugar

1/2 cup packed brown sugar

2 eggs

3 cups all-purpose flour

1 tsp. salt

1 tsp baking powder

1 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp grated fresh ginger

1/4 cup dark molasses + 2 Tbsp hot water

1 1/2 cups sweetened dried cranberries

1 1/2 cups chopped walnuts

1 cup powdered sugar

1/8 tsp salt

1/2 cup finely chopped candied ginger
